Sharing Our Stories Through Food: Greek Salad Dressing

I discovered this recipe about 13 years ago, labeled as a variation in the classic purple Spice and Spirit cookbook. I make it in bulk, without the pinch of sugar and keep it in the fridge. Spoiler: I use this on every kind of salad! Vegetables with green salad, cabbage salad, quinoa salad, you name it!

Greek Salad Dressing x3

Ingredients

  • 1 cup oil
  • 3/4 cup vinegar
  • 3 cloves garlic minced/sliced
  • 1 Tbs salt
  • Pepper to taste

Directions

  1. Put it all in a container and shake it up!

Keep it healthy with olive oil and apple cider vinegar or try any oil/vinegar combination! Add oregano or other spices when you are in the mood also! What’s your fave combination?

Sample salad: romaine, onions, cucumber, tomatoes, shredded carrots, craisins, sunflower seeds, crushed tortilla chips.
